- 1500 g Whole chicken or chicken breast
- 22 cups Jasmine rice
- 35 cloves Garlic
- 430 g Ginger, julienned
- 51 tbsp Sesame oil
- 61 tbsp Light soy sauce
- 72 tbsp Fermented soybean paste
- 85 pieces Thai chilies
- 92 tbsp Rice vinegar
- 101 tsp Sugar
- 111 piece Cucumber
- 122 stalks Cilantro

Bring water to boil, poach whole chicken on low heat for 30-40 minutes until cooked through

Remove chicken and immediately plunge into ice water for crispy skin

Sauté garlic and ginger in sesame oil until fragrant, add rice and stir

Cook rice using chicken broth instead of plain water

Make dipping sauce by pounding chilies, garlic, soybean paste, ginger with vinegar and sugar
